I guess some of Mingus' stuff is worth a look (The Black Saint and the Sinner Lady, Mingus Ah Um) although I've never focused purely on the bass playing.
Miles Davis 'Bitches Brew' and 'A Tribute to Jack Johnson' - both have some great audible bass work but may be a bit tedious cos of the length of the songs. Strong funky rhythms and there are actually two bass players on Bitches Brew, and more than one drummer which is why it can sound so cluttered.

My years of being a bassist playing everything from metal to funk have turned up some pretty good bassmen. It's frustrating listening to most music from a technical standpoint nowadays when I can't hear bass; I know the exact feeling. I get a little jolt in my heart when I hear a band with an AUDIBLE bassist. Those were just off the top of my head, I'll check through my library later possibly for ya.
