Be sure to feature Ghandhi's when it's done too because his is superb and I made this almost as a meme out of spite for someone else here claiming to make a country compendium. ;-P (And because I'm on break right now and had the time to pull together a country list when there was some significant country discussion happening).
theBoneyKing 04.15.21	Not sure what else to rec you from here Ghandhi since I feel my country taste runs smoother/more modern and less trad than yours. I dig that simple lyric-driven stuff with solid songwriting even if it doesn't do anything innovative.
Sowing 04.18.21	I never thought of Wilco as country, but I suppose they fit the bill. Being There is incredible. Big props for 41, 43, 51, 74, 88, 96, 97, and 99. Check Ruston Kelly's debut Halloween if you haven't yet, it's better than his latest by a good bit.

And Jeff Tweedy is one of the founders of the style for his work with Uncle Tupelo. Halloween is great, I just enjoy the latest one more.
