Easy Meals Ftw

Cooking for a living, I rarely put much effort into cooking my own meals, but these are some fairly simplistic (and relatively inexpensive) meal ideas I've incorporated into my fast food and cereal diet.

Souped-Up Ramen - It doesn't take much for the average instant ramen to become a delicious,
hearty soup. Just cook and strain the noodles as you might normally do, but then add a stock or
broth of your choosing with the provided sauce packet. Then throw in some other goodies. Stuff like
miso paste, mushrooms, scallions, nori, radish, and poached egg all go wonderfully with the savory

Korean BBQ Tacos - Grab a pack of microwavable, sauceless pulled pork and pop it in the microwave
with some bulgogi (Korean BBQ) sauce. Combine that on some flour tortillas with kimchi or Asian
coleslaw (slaw mix, soy sauce, sesame oil, rice vinegar, honey) for a tasty Mexinese treat. You can
also substitute the tortillas for rolls or buns and do sandwiches instead.

Farfalle with Yogurt and Zucchini - Cook farfalle the usual way, but throw in some grated
zucchini strips right as the pasta is done cooking. Then strain everything and throw it in a
sautee pan with some butter and Greek yogurt. Season with salt, pepper, and dried herbs
and then toss some more with grated parmesan.

Soy-Ginger Tuna Sandwich - Take a can of your basic chunk albacore and chop it
up. Mix that with some soy-ginger dressing and put it on toasted bread with bibb
lettuce and tomato and avocado slices.

Shrooms and Eggs on Toast - Toast some baguette slices in the oven on one pan. On
another, roast some whole, de-stemmed shiitakes tossed in soy sauce, extra virgin olive
oil, and black pepper. Combine the two once they're ready to come out of the oven, and
then top your open-faced sandwich with over easy or sunny side up eggs and some
salty cheese shavings.

Grilled Cheese and Tomato Soup - Find a carton of decent-looking tomato soup and doctor
it up with chopped fresh herbs (any combination of basil, thyme, and oregano) and any
extra cream or half and half you might have lying around for your coffee. Serve that with a
grilled cheese sandwich concocted from some nice, easy-melting cheese (smoked gouda,
brie, etc.) and good bread (brioche or fresh sourdough).

Linguine Carbonara - Cook some diced bacon (or pancetta if possible) until brown but not
crispy, and then drain almost all of the grease. Put it back on the heat with some chopped
garlic (and chopped fresh herbs if possible) before adding a bit of red wine to the pan. Reduce
the wine and add cooked linguine. Stir in a mixture of raw egg and shredded parmesan and
cook for a few more minutes, adjusting seasonings.

Tomato and Beet Salad - Cut up some fresh tomatoes (try finding some with some actual flavor)
and pickled beets from a jar. Add them to a bowl with some mixed greens and toss with a little
bit of the pickled beet juice, extra virgin olive oil, crumbled feta, walnuts, and salt and pepper.

Instant Fried Rice - Get some of those single-serving, microwavable Asian rice bowls
and nuke them as the directions specify. Sautee some diced onion, carrots, freeze-
dried peas, and egg in a bit of oil before adding in your microwaved rice. Vigorously
chop and toss the rice for a while, and then add in some soy sauce, sriracha, and black
pepper. Keep mixing and cooking until everything's evenly incorporated and perfectly

Chicken and Rice Soup - Sautee some diced onion in a sauce pot, and then add some rice
from a couple of the aforementioned instant rice bowls. Stir in some chicken stock/broth
and simmer until the rice is cooked. Add some pulled chicken meat and season with salt,
black pepper, and dried herbs
