Everyone has genetic memories in their DNA from ancestors, the Animus is basically a viewmaster for those. Also, through the field of magical science, whoever is in control of those memories basically enters a film montage and gains the abilities in a vastly shorter amount of time than it would take them normally.
However, since these are supposed to be memories, it never explains why you can say fuck it and jump off a cliff in the first mission. | FadeToBlack
