Dedes 01.14.25	I made bigos yesterday and it's tha best Cubed chuck, kielbasa, bacon, mushrooms, cabbage, saeurkraut, onion, plenty of seasonings and a little stock (not much, the juice from the kraut supplies plenty o liquid) and man it's so fuckin hearty. Def not for those who don't dig the kraut tho!

NexCeleris 01.14.25	Kale African style (3/4 servings) You'll need: 500 g/~1 pound of kale 1 mid-sized onion 3 tbsp. vegetable oil ~150 ml/half a cup of vegetable broth 1 or 2 tsp. cumin (yeah, haha) 1 tsp. mustard seeds or 1 tbsp. German-style mustard 3 tbsp. crunchy peanut butter (or more; also works with freshly crushed peanuts) 1 clove of garlic Some hot pepper to taste Salt & pepper 1. Wash and roughly chop the kale. 2. Peel and dice the onion, then gently roast it in hot oil until translucent. 3. Add chopped kale, sauté it, then deglaze with broth. Let the kale cook (w/ lid) until it's reached the desired degree of doneness (al dente/soft). 4. While the kale is cooking, peel the garlic and chop it finely, along with the hot pepper. 5. Add garlic, hot pepper and spices to the dish and let everything simmer at low heat for a few minutes. 6. Finally, add the peanut butter. Stir thoroughly. Only heat for a brief moment, else the peanut taste will be gone. This is a great companion to hearty meats like smoked pork chops or bratwurst, but also makes for a fine vegetarian entree when combined with potatoes of any kind. Very easy to recommend, even to kale haters. Spinach is dope.

FrozenFirebug 02.03.25	idk when they started calling pangasius swai but i wish they didn't because pangasius sounds so much cooler for being a disgusting bottomfeeder it doesn't ever taste muddy at all. tastes like catfish but cleaner and more spongey and develops a natural buttery crust when cooking. never had fresh sardines. don't mind the canned ones but didn't wanna count canned fishies.

I too have become a carbonara purist in the process and don’t fuck with cream or garlic in the recipe - it really is a whole different ball game when it’s the pecorino, egg yolk and black pepper doing the heavy lifting.

Demon of the Fall 03.25.25	going to a Michelin starred restaurant for my birthday (yes I'm a wanker) and they have released a new menu to peruse. There's a side of "giant hash brown" listed. Hmm this is not exactly what I would expect from such a place but okay, lol. I've been once before and they do make a point of trying to be "accessible" for normies like myself. No doubt it'll be nothing like any hash brown I have encountered before and I'm kinda curious I'm looking forward to that sirloin steak tho, yum!

I made a duck risotto the other week with some duck stock I made from the leftover carcass from a duck curry I made the week before. Doesn’t quite hit the high of the duck tartare I had at some fancy joint out here a few years ago but it’s in the ballpark!

Dedes 04.13.25	Actually fuck it imma post a recipe for you lovely beautiful peoples Good ole Mac n jesus cheesus 2 boxes of rotini pasta .5lb Cooper cheese .5lb smoked gouda 1lb cracker barrel aged reserve cheddar if no find any mega sharp cheddar works Some butter idk like a quarter of a stick??? Milk (adjust for consistency) Flour (for the roux ur gonna make just make sure you have it!!) Pecorino Romano for grating Salt to taste Black pepper to taste Garlic powder to taste Curry powder to taste Put big pat of butter in pan on low heat Put in flour and mix until it's the consistency of a thick soup (think broccoli cheddar or a bisque) and wait until the color is a fine sleek handsome blonde. Pour in milk a little at a time and let simmer as ya stir until it's a smooth but slightly thick sauce that can coat the back of the spoon. I know it's delicious. Don't drink it. Put in the aforementioned cheeses (not the pecorino) and stir until all is incorporated. Grate in some of the pecorino (whatever amount feels right to your soul) and add all the seasonings but not the salt!!! Taste. Now decide how much salt you want (pecorino is a salty cheese). Cooked those rotini bitches until tender but firm. Crank that oven to 375. Grate more pecorino on top of the Mac. Shove er in the oven until she's golden like a freshly spray tanned IFBB pro bodybuilder. Don't ask about breadcrumbs or I'll dropkick you. This is a true Mac recipe.
