I was vegan for a while as a student but I was too lazy/didn't do my research and ended up losing more weight than was healthy for a guy of my size. Then I moved in with my now-wife and just kinda never went back. Full vegetarianism is definitely something I've thought about lately though. I can commit to that.

Meat has become the exception rather than the rule, which isn't something I would've expected to happen to me. Personally I view meat substitutes as an experience rather than a chore. I'm really enjoying getting fried tofu on pad thai, my local pizza spot has a seitan cheesesteak that is amazing, and I took the opportunity to try the sofritas at Chipotle, which are basically ground beef.

Also we use plant-based “beef” crumbles as a substitute in spaghetti and I literally can’t tell the difference. Food science has finally gotten to the point where we can truly mimic all them good meaties

hel9000 03.02.21	Was vegan for four years up until this past summer when I started eating some cheese again. Vegan food can be fucking great and I really got into a groove - had a good dozen plus recipes that were staples, plus after a year or two you really narrow down what ready-meat and cheese substitutes/frozen meals are worth buying. Even vegan cheeses like Daiya, etc. have gotten a lot better in the past couple years (every storebought mozzarella I've tried on pizza has just been depressing though, hence the recent change.). I generally find vegan restaurants to be overpriced and/or bland, but A&W, Harvey's, KFC, Wendy's have all started carrying plant-based items recently that are actually pretty damn good, I know a lot of omnivores who get that stuff.

I’ve had amazing vegan food before, I just hate when “vegan food” means taking a traditionally meat based dish and just inserting a meat substitute. Like no, sorry, this block of tofu does not taste like steak. This seitan pulled pork sandwich couldn’t be further from pulled pork. I like tofu and seitan when they’re treated as their own food with their own dignity. Mapo tofu? Fucking delicious! Coconut cream in place of heavy cream? Not only does it work, but it’s often preferred! Cauliflower Buffalo chicken? Fuck off. And I haven’t had vegan cheese in a loooong time so maybe it’s gotten better but, nah, maybe just do without that for the time being

WeepingBanana 03.02.21	Pher I’m literally listing dishes where I think tofu or seitan work beautifully because they were conceived with tofu and seitan in mind. Such as mapo tofu. I just hate when they’re thought of as meat substitute and not perfectly fine foods that can stand on their own, cause then you get godawful abominations like BBQ seitan which tends to just be bland and floppy and pretty much only tastes like BBQ sauce. I’m not saying doing the switcheroo CANT EVER work, but most of the time I would rather just sub more veggies for meat than sub meat substitutes for meat because most of the time it just feels desperately inserted in there

I try to do a couple of meat free days in the week, but it's more to do with me learning new recipes/expanding my cooking knowledge so If I end up with someone who doesn't eat that much meat (which is pretty likely these days) I can cook stuff they'll eat, I know I'll never give it up.

Better energy Do feel like im an the edge of a cardiac arrest any day though so maybe hold the glowing report. Some vegan food is/was great. Especially many of the cakes and stuff. I used to be vegan so Im not a Vegan hating carnivore either. I think morally theyre got it right tbh. Im just doing whatever I can for me and feeling ok.
