Firstly, you might think that there are certain adaptations that can't come about just by gradual, step-wise accumulation of mutations. There is potentially a big difference, 'engineering'-wise between, say, the size of a body or some teeth changing over time, and an entire respiratory system changing over time. You might think that changing from breathing under water to breathing on land requires the whole system to be changed at once, it can't come about gradually. This is the point of Michael Behe's argument from 'irreducible complexity'. Second you might accept that, given enough time, evolutionary mechanisms could account for all manner of adaptations but deny that there has been enough time. That might be because you think the earth is young. Or it might be because, even granting standard old ages for the earth, you don't think there's been enough time.

There are actually scientists with doctorates in relevant fields, and teaching at respectable institutions who believe it. (They are of course an extreme fringe minority). To think that it can only exist alongside ignorance of basic science is a total misunderstanding of the cognitive mechanisms that can uphold such beliefs. Sure, your average pew dweller might just be dumb. But many of the thought leaders of the movement are very, very smart people who find ingenious, very technical ways to accommodate the data. Intelligence is the key to rationalisation, not stupidity. Stupidity can actually keep you safe from fringe, wacky beliefs.

But something can be very implausible and yet have technical, complicated arguments in its defence. Google the Answers Research Journal. Some articles within it are purely in biblical studies or history. But there are a number of very technical articles dealing with scientific data in biology and geology. Maybe your average lay creationist doesn't go near that stuff but it's out there. Again I don't think it's a credible view. But that doesn't mean that anyone with a high school science education could take down its best defenders in a debate. They absolutely couldn't.

I'm making a very modest point here. I'm not saying that young earth creationism is a respectable live option on the table. I'm not saying it's good scholarship. It's not. I'm just saying that it's best defenders are not simply saying that science can be ignored, that the fossils are Satan testing us etc. Rather, they use analytic reasoning tools that demonstrate a high level of intelligence to try and reinterpret the basic data. E.g. they don't just dismiss carbon dating out of hand. Rather they try and challenge the assumption (sometimes with ostensibly empirical testing) that, say, the rate of decay has remained constant over time. If it hasn't, then the results we get from carbon dating can be consistent with a young earth. Now, I think that all of the ways that they reinterpret the data fail to produce an overall picture that is anything like as parsimonious as the mainstream scientific one. But the point here is just that the best defenders of YEC are not simpletons, whatever else might be said about them and their work.
