03.02.12 | As I'm sure you must know by now, working in a kitchen is pretty different from any other form of employment. It's a lot of interesting characters, and it's a lot of long hours and hard work. It's a profession that is what you make it and where nothing is guaranteed. Don't expect days off, benefits, retirement, etc. It's an industry abundant with rampant drug use, debauchery, and sometimes shady people. And culinary school generally costs a lot of money. That said, there are a lot positive things about the business. School, specifically, I enjoyed a lot. If you fully realize what you're getting into and want to go ahead with it, then by all means. |

03.02.12 | Now, I don't cook perse but I've spent 1 year and a half working mostly in the kitchen, I see all the shit that goes down, aid the guys in pulling them cutlets out of the freezer and shit, set up breadplates with peppers and send them to customers. I've seen shit go down, i've tried to watch and understand how things work, it's the ultimate macho Italian restaurant.
That said the drugs,debauchery, I dont give a fuck. Going to avoid that stuff anyways. I go in to work, get paid and get out.

For the first time I can honestly say that i'm interested in a academic pursuit and striving for something. The 4/5 years I've spent on and off at random colleges were dicking around taking basic courses and electives. |

Le cordon bleu is the absolute tits, im not doing that, I hope I don't. Fucking expensive and way too upscale, I aint no classy fella. The one by me has a restaurant open to the public where your food is made by the students and the best thing, the food isn't that expensive and it's delicious and has an artsy presentation to it. |

uh it sucked hard but free food. working in fast food is awful, i cant think of anyone i ever worked with who wasnt a dumbass. when we werent understaffed though it was smooth. i really like making the chicken, i actually considered culinary school for a while |

03.04.12 | my best friend just graduated kendal college in chicago, apparently it's a good program or something. but he spent two years there working hard as fuck and now he's the chef at a hilton working hard as fuck.
there's a lot of work. it's gonna be hard as fuck. but it seems like you're in the same position he was in when he started, and it's seemed to given him a lot of purpose. he seems a lot happier.
