Baked potato is the way to go. Add on whatever toppings you want / can swing. Black beans seasoned well are also relatively cheap and make great healthy protein / refrigerate nicely for a couple days

Speaking of which, harissa, sambal oelek, ajvar and/or red (Thai) curry paste are all comparably inexpensive considering how many servings you get out of them unless you're a spicelord. Add your choice of canned tomatoes (or preferrably passata from glass bottles), coconut milk, cumin, curcuma, coriander seed, mustard seed etc. for a quick and tasty meal.
Tzatziki is also easy to make yourself and goes great with most vegetables and meats. No clue re: the price of Greek yogurt in the US tho.
And if calories don't matter, Penne al baffo. Super quick prep. |

lentils good shout though too, super mindlessly easy to cook. i like buckwheat but it's kind of a "premium" food because it's so niche so not really worth the cost
harissa is the shit, i tried making some once and it turned out pretty awesome too, toasted celery seeds and caraway seeds then processed it with some garden peppers and a lot of garlic |

04.29.25 | i think harissa traditionally uses like, roasted hot peppers, i didn't do that i just grabbed them and processed them fresh, but it still worked fine. so if you want to skip that step doesn't seem like a huge issue.
toasting the seeds on a hot dry pan is good though and easy enough! makes them super aromatic
the store bought harissa i get is just in a tube and i go through it pretty quickly honestly. it's called le phare du cap bon? (lighthouse of cape good?) |
