Havarti - I discovered Havarti somewhat recently (within the last three years). In that short period of time it has become easily my favorite cheese. With a mild flavor and yielding softness, Havarti is a versatile cheese that compliments many kinds of food. It pairs well with practically any Italian cold cuts as well as steak. It's an excellent addition to any plate of nachos. A well-rounded, delicious cheese for any occasion.

Emmentaler (aka Swiss) - Swiss cheese, in its many variants (both American and Swiss), is an excellent cheese. In addition to being somewhat healthy and packed with antioxidants, Swiss cheese has an excellent flavor and consistency when melted. Paired with Gruyere, Swiss forms the basis for cheese fondue; a decadent treat. Swiss cheese has remained pure and delicious despite centuries of proximity to relatively swarthy and diminutive... cheeses of Roman origin.

Parmesan - Parmesan is a cheese that needs no introductions. Though it is seldom the main attraction of any dish, Parmesan is a superb additive to nearly any pasta based dish. Carbonara laden with generous helpings of Parmesan is an exquisite dish.

Pepper Jack - For fans of a little spice, Pepper Jack is must have for any sandwich. Combining the sharp cheddary flavor of Monterrey Jack and a succulent chili kick, Pepper Jack is a fantastic topping for a Philly Cheesesteak sandwich.

Muenster - Muenster cheese was once my favorite cheese for all occasions. It has a sweet, nutty flavor and a highly accessible versatility. Though it has fallen out of favor to Havarti, Muenster is still a solid snack choice.

Juusto - Juusto is an interesting cheese that hails from Finland. It does not melt when heated. Rather it becomes bubbly and spongy. Juusto's most unique characteristic is its texture. When chewed, it squeaks noticeably. Juusto is delicious on its own. Despite its ignoble descent, Juusto's staunch resistance of Russian communism in the 30's and 40's has earned it a place in the pantheon of noble Scandinavian cheeses.

Mozzarella - Although mozzarella is more or less useless by itself, its role as a quintessential pizza ingredient earns it a place on this list. Shredded mozzarella is relatively undesirable but fresh buffalo mozzarella from Naples is DELICIOUS, especially when still submerged in brine.

Queso Fresco - Though not easy to find in my neck of the woods, Queso Fresco is a rare and delicious treat. One of those rare cheeses that is enjoyable at any temperature.

Cheddar - I don't particularly care for straight Cheddar, but when I am mildly sauced, a pub burger lathered with bubbly cheddar is a thing of beauty and decadence. And who could say no to a nest of steaming hot cheddar cheese fries?

Bleu Cheese - Despite being ethnically superior to most cheeses, I have found that bleu cheese is lacking in culinary applications. Bleu cheese is best utilized as a tasteful additive but NEVER as the focal point of a dish. Still it deserves an honorable mention for its use in a classic Neapolitan Quattro Formaggi.
