I've only had a few months to really explore the genre, but I've found some really great stuff so far. Here are some of my favorites at this point (not ranked)
1Wolfgang Amadeus Mozart
Requiem in D minor, K. 626

Amazing and one of Mozart's darkest pieces. Pretty much a masterpiece
2Franz Schubert
"Great" Symphony No. 9 in C major, D. 94

One of my personal favorite composers. His lieder works were what he was mostly famous for but I really love his symphonies and other various works. This and the Unfinished Symphony are 2 of his best
3Edward Elgar
Cello Concerto in E minor, Op. 85

Brilliant piece of music and my new favorite concerto
4Felix Mendelssohn
Violin Concerto in E minor, Op. 64

Really poignant piece
5Johannes Brahms
Violin Concerto in D major, Op. 77

This one just keeps getting better every time I hear it
6Wolfgang Amadeus Mozart
Clarinet Concerto in A major, K. 622

One of the most relaxing pieces I've heard
7Ludwig van Beethoven
Piano Sonata No. 23, Op. 57

He has a ton of noteworthy piano pieces but this is one of my favorites
8Franz Schubert
Piano Sonatas D. 784 & D. 894
9Ludwig van Beethoven
Symphony No. 6 in F major, Op. 68

His 5th and 9th are great but I like this calmer side of beethoven
10Johann Sebastian Bach
Brandenburg Concerto No. 5 in D major, BWV 1050

Good ol fashioned bach. All the Brandenburg concertos are great but this one takes the cake
11Jean Sibelius
Violin Concerto in D minor, Op. 47

Took time to grow but pretty dang good
12Antonin Dvorak
Cello Concerto in B minor, Op. 104, B. 191

Pretty accessible piece by Dvorak. Can u tell I like concertos?
13Johann Sebastian Bach
Concerto for 2 Violins in D minor, BWV 1043

One of the first pieces I ever heard by Bach and one peaked my interest In the violin
14Franz Schubert
String Quartet No. 14 (Death and the Maiden)

Another extremely memorable piece by schubert. This one kicks ass
15Johannes Brahms
Clarinet Quintet in B minor, Op. 115
16Wolfgang Amadeus Mozart
"Jupiter" Symphony No. 41 in C major, K. 551

Out of 41 symphonies his final really is his best
17Sergei Rachmaninoff
Piano Concerto No. 2 in C minor, Op. 18

Gotta listen to more by him but this was beautiful
18Dmitri Shostakovich
Cello Concerto No. 1 in E-flat major, Opus 107

Really cool/spastic concerto
