If you really enjoyed ulysses, check out Pynchon's Gravity's Rainbow. I had trouble starting it, and found that V was an easier starting point, but I think Gravity's Rainbow is the better novel overall. In a similar vein, you could check out Infinite Jest and The Broom of the System by DFW.
I really enjoy Dubliners by Joyce. If you haven't read that then definitely rectify that.
In terms of fantasy, I really like Rothfuss' kingkiller series so far, even though he gets a bit pretentious at times I can deal because of the amazingly beautiful sentences he comes up with sometimes.
The Gormenghast novels by Mervyn Peake are also fantastic.
I also enjoyed Julian Barnes' England England, if you're up for some contemporary satire, and if you like the old school get A Modest Proposal by Jonathan Swift.

05.16.14 | Currently I'm reading My Name Is Red by Orhan Pamuk, which is really quite humorous and well written, and the plot so far is unfolding nicely. I also started Blood Meridian about a week ago, which as most people know, is hailed as McCarthy's greatest work. Highly recommend that one if you haven't tried McCarthy yet
Murakami was already suggested and I couldn't agree more. His books get more praise than they deserve IMO, though I do think he's a great author. My personal favourites are A Wild Sheep Chase (for cool and weird mystery), Norwegian Wood (which is just an excellent and nostalgic story), and The Wind-Up Bird Chronicle (also a mystery at its heart but has as many downs as it does ups). Next on my list is Kafka On The Shore, but I don't know if it's good yet obviously.
