when you're younger everything seems more fresh and innovative, that's for sure.
once you listen to enough music u start to generate some filters with what you instinctively 'like' and 'dislike'... It's weird, and it's kinda subconcious, too? it's more than just your 'taste', it's the difference between music 'speaking to you' and not. If i could express that better, i'd be a god damn philosophy major.

"'what you seem to be saying is a 5 for a lady gaga album, based solely off how fun and enjoyable it is, seems dumb when more complex and technical and impactful music is out there.'
This is definitely NOT what I'm saying"
No, but it is what you should be saying tbh.

'it's the difference between music 'speaking to you'
I usually label it the 'magic factor' because it's not entirely logical and based on loads of conscious/subconscious personal filters and associations as you suggest.
I do think people get better at sniffing out a certain integrity as they get older maybe?
Also as you get older finding music that 'I shouldn't like' or 'I'm worried if I'd like this' gets less which is a shame in a way...plus the internet now has removed a bit of that feeling. I remember buying albums based on hearing one song on the radio or off of a couple of reviews/recommendations and having to work through some strange initial reactions. The money tied you into a commitment of sorts.
For me now the most extreme/scary musical experience would probably be trying to listen to an Abba or Queen album and trying to find something to like in it. What's the final frontier now? The end game? Getting into opera?

Yeah man, get into opera. Opera is cool.

'“when you're younger everything seems more fresh and innovative, that's for sure. “
The opposite has held true for me.'
Yeah, it's not that it isn't fresh that's the problem - more expanding listening into older albums is an issue for me as it'll show up that stuff I thought was very innovative was actually clearly referencing something else which may or may not actually be better.
I still feel I find a lot of fresh sounding music.

I definitely find it a lot harder to get really excited about any release, band, or show as I did 15 years ago. A lot of the stuff I think of as classic or near classic, I probably wouldn’t think anything of the sort if I heard it for the first time now instead of as a teenager. Studies bear it out, apparently the rate of forming really strong bonds to music declines heavily after 30. I’m not quite there yet, but feel myself approaching that curve. Instead of getting blown away by a dozen albums per year its more like once every couple of years.

i mean, you can always be a bitter-ass teenager that only listens to 'real music' and the same 3 old bands over and over and over and over again, always looking down in disgust to anything remotely outside of your confort zone.
Just saying that the more music you are exposed to, the harder it is to find EVERY new thing that 'special' anymore.

Obviously that's true, but I think there's a psychological component to it too. Your preferences have more plasticity when you're younger.

Maybe that's the issue, you just have to... try not to understand (:
