Can't really criticize that since I'm one of those that search for HL3 hints at Gaben's dinner menu.
Giving them backstories isn't that cool, but it happens with many games and specially in anime. As for dark personalities or stuff like that, I think that a game like Undertale actually makes stuff like that pretty plausible. The characters are indeed way darker at some points than their "goofy" characteristics may suggest

thats a given for just about anything of a light hearted nature with a darker side, you get fans that like to hone in on those darker aspects and over exaggerate them because therye 14 and dead inside. Its a pretty trivial thing to hone in on as it in no way bleeds into the actual game and there are far better fan projects that dont succumb to the fandom edge.
like... lets say the Aftertale comic or something like Underpants or A Dreemur Reborn. or the millions of comics out there in the world. Also to be fair, the idea of a character who has an approximate knowledge of timelines where everyone he knows will die and he can do nothing about it is pretty depressing as hell. but Sans is far more interesting for complete different reasons.

Basic run-down:
Alphys: Almost committed suicide after the determination experiments were a catastrophic failur
Asgore: Wife left him after he murdered children
Toriel: Tries to do whats best and protect kids who are then murdered or die
Sans: Depressed over the fact that life can never be normal due to the circumstances of SAVE points.
Papyrus: Ah, this guy is amazing there is nothing sad about him.
Flowey: Literally dead inside.

i think it's unfortunate that people need to invent and overanalyze stuff to connect with it and feel it, like they know they should be feeling more that what they feel, and try to come up with it by inventing stuff and seeing things that are not there
at least that's what i feel people do, kind of a personal projection onto others

Well, it is their interpretation after all, every serious interpretation of pretty much any form of art will find things that aren't "there" and some people may certainly see more stuff than others. Art is supposed to be interpretated and we're supposed to feel it and if relating it with personal situations helps us to appreciate that form of art more or even helps us with our own issues... there's nothing wrong with that
Isn't the fact that we can connect to something that makes the difference between an excellent game-album-movie-book and a SPECIAL one?

As I said, I don't think the problem lies on what people concludes of the game but on the fact that they're spreading it all over internet like facts and pretty much bashing the hell out of everyone that disagrees
