@Mayhem: I guess it all depends on era/subgenre. If we're talking 70s jazz fusion (my personal favorite kind of jazz), here are a few of my favorites:
Return to Forever - Romantic Warrior, Light as a Feather
Brand X - Unorthodox Behavior, Moroccan Roll
Weather Report - Heavy Weather, Black Market
Miles Davis - Bitches Brew
Mahavishnu Orchestra - The Inner Mounting Flame, Visions of the Emerald Beyond (sadly was never into Birds of Fire as much)
Jean Luc Ponty - Enigmatic Ocean
Al Di Meola - Elegant Gypsy

Russell Malone - Sweet Georgia Peach (phenomenal guitar-driven jazz fusion and smooth jazz)
Vital Information - Come On In (modern jazz fusion with progressive elements)
Hiromi - Alive (prog/jazz fusion mix)
Tal Wilkenfeld - Transformation (fantastic showcase for jazz bass)
Chick Corea - Eye of the Beholder (Chick Corea always rules anyway, imo)

Jazz is a different listening mindset. Highly structured compositions have the satisfying sense of completeness and order. Jazz is more appreciating music the moment you hear it without knowing it entirely, being surprised at chaos unfolding and resolving into loose order.
