So, the name of the song is "Vinushka", but I swear Kyo says "VinSHUka" in the beginning of the song.

Oh, he sure says it like that every time. I assume it is because for certain word structures in Japanese the "u" between consonants would be mute (e.g. the name "Yusuke" would sound like "Youskeh"). The latter part is probably done like that because they don't really have the group "shk" in their words and that may cause some trouble with foreign terms.
I don't know the language properly, though, so take it with a grain of salt, maybe it is just an artistic choice.
