Honestly many of the most intricate moments of the first three In Flames are those beautiful little acoustic flourishes. Even Colony has some super pleasant acoustic earworms.

There's a lot of fan covers on Youtube that cover a whole lot of songs. I've listened to quite a bit of them, there's one big one in particular that has acoustic covers of almost every song from Jester up to Clayman, it's really neat.
