Like how did they go from a promising band with city of evil to this mess? I still find it mind boggling

I'm totally biased but I've always dug this album. I was just thinking about how much I used to love A Little Piece of Heaven the other day and it's always fun to come back to

I always love discovering a new band to listen to especially with an extensive backlog discography to sift through and, seeing as how I basically only listen to rock/hard rock, I was really hoping to get into a7. And, to be fair, I haven’t actually spun a whole album. But man, I keep listening to tracks that are considered to be their best and (no offense to the fans) they’re pretty awful! And Shadows vocals are incredibly grating.
Are they just not for me? What album should I listen to? Just seems very generic.

don't bother Lark. There's no substitute for quality and this band has none.

I'd go for The Stage. It's not my favorite (that's Waking the Fallen) but it fits their current clean style and musically it's clearly their coming of age album to me. Brooks must have ignited something under their asses.
Otherwise go for Waking the Fallen (metalcore) or City of Evil (clean vocals and speed metal vibes, very energetic in places).
