Yes, I also find it fascinating that death metal has some of the best production out there, although one would think it's inherently meant to be 'loud' and assault your ears.
It's not like big bands can't have that as well, but people are used to a set standard and there's no real demand for it. Most of the time the persons involved have to fulfill the band's or label's wishes. Of course, there are certain engineers that can achieve very neat results while going along with that framework (e.g. Jens Bogren and Tue Madsen).
