Ulcerate is a great place to start. Another recent favorite of mine is Crimson Massacre's The Luster of Pandemonium.

I think Bloodbaths - Nightmares made flesh is like THE death metal album for those looking to get started with the genre. I know it's not a classic by any means but it is accessible as fuck

thats not the point of recing for beginners. good records for beginners are records that will help them get into the genre.
