Honestly both 'Homogenic' and 'Vespertine' are on the very digestible side of experimental. You really can't go wrong. I'd say start with 'Homogenic' as it is a little more iconic/watershed.
Her most "accessible" stuff is on 'Debut' and 'Post,' though, but those are significantly more straightforward pop, far less arty and experimental than anything after them (esp. 'Debut'), but both still really good.

Her evolution and constant self-reinvention is a beautiful thing to witness chronologically. If you're interested in artistic evolutions like that (like I am), it's the best way. But yeah, this one is very instant either way, so it works just as well.

Debut then chronological (2)

Not always a die-hard advocate of this method, but with Bjork it makes a ton of sense. Her evolution is interesting, her more accessible works are towards the beginning and some are arguably better than what followed.

all bjork albums are very different tho, so if you don't like one you might end up liking the next one lol
