Rachel's are excellent, but very classical style post rock (if you like that kind of thing).
Dirty Three are amazing, check out Ocean Songs as well.
Do Say Make Think are very much the jazzy side of psot rock which has never appealed to me as much but they get a lot of praise, especially You, You're a History in Rust. Storm and Stress are equally, if not more, jazzy.

I would recommend:
