I think I agree with your main point that there’s a lot of abrupt and awkward transitions but the quality of the sections shone through and the more I listened and knew what was coming the less abrupt those sections felt.
For me this was probably a 4 on first listen but just kept growing on me more and more over the year until I 5d it a month or so ago.

Tbh if so many people hadn't hyped this up as a Deftones ripoff I probably wouldn't have even bothered with it because this particular strain of 'core is very much not my jam, all the heavy parts just sound so generic and bland and the shoegaze-y parts frankly aren't super impressive to me either

They would undoubtedly share a fanbase but Deftones haven't written anything similar. Seventy percent of the Loathe record is written in that Vein brand of nu-metalcore with interludes of Teenage Wrist. I can see why someone might think "oh, I could see Chino singing this" during the clean vox, but it's not a great comparison.
The people that compare Loathe to Deftones are the same people that would compare Glassjaw to Deftones.
