ok so quick primer: time signatures define the rhythm of a piece, how many beats there are to a bar. the top number is the number of beats per bar, while the bottom number defines what duration of note is one beat. in 4/4 time (the most common) the quarter note gets the beat, and there are four quarter notes per bar. in 3/4, there are three quarter notes a bar. Now, time signatures aren't the same as fractions - 4/4 isnt the same as 8/8 and 3/4 isn't the same as 6/8. This is because of beat division. 4/4 and 3/4 are both what's called simple meters. In a simple meter, each beat is divided into two. This is contrasted with compound meters like 6/8, where each beat is divided into three. In 6/8, the pulse is typically ONE two three FOUR five six, a very waltzy rhythm. You can see the contrast here because 3/4 is ONE and TWO and THREE and; so 6/8 is two beats each divided into three, while 3/4 is three beats each divided into two.

Now, 8/8 is a bit odder. 8/8 contains three beats, two of which are compound (divided into three) and one of which is simple (divided into two). Where 4/4 is ONE and TWO and THREE and FOUR, 8/8 is ONE two three FOUR five six SEVEN eight.

this just touches on some of the basics, if you want to read more i suggest the following from musictheory.net:

as well as just listening to mathy music and trying to dissect the beats.

they subdivide into really weird polyrhythms, i've never been able to actually count most of their stuff without looking it up. Personally I recommend Thrice (they have a lot of typical time signatures but tend to math it up from time to time) for finding basic counting of odd meters, and Off Minor for challenging yourself to decode the whole record. Converge of course has a lot of mathy stuff but can get too fast to count if you don't know what you're doing, same for Dillinger Escape Plan. If you dig electronic at all, Venetian Snares plays in 7/4 a LOT, check Hajnal, a really great example of 7/4. Autechre occasionally does weird meters (777, Dropp, Cichli, IO) but most of their stuff is just 4/4 with weird syncopations and divisions.

Playing in weird time signatures is infinitely better than counting them. All sorts of musical exploration opens up when you start playing in timings other than 4/4.
