Pretty hard to define metal without some kind of cluster analysis. Put simply, though, I think metal is typically sort of Nietzschean in spirit, typically has ripping guitar solos, fairly extreme tempi (fast or slow!), etc. Black metal is kind of pushing all those boundaries, but I think since so many people in that scene kicked off in (obviously metal) death metal bands, that gets grandfathered in. Something like this or Crimson I think is heavy but to many people just lacks the macho flavor, the guitar heroics, the speed, etc. Personally, I think of this stuff as "heavy prog"
