Well there are practically no breakdowns to speak of in hardcore punk. so I have no idea why the "core" in "metalcore" are basically the breakdowns.

that's just down to mislabeling and misconception
if you listen to a metalcore band and hear no hardcore there are two possible reasons why:
a) there is no hardcore, it's been labelled metalcore because of breakdowns, a common error
b) you don't know what hardcore sounds like (not meant to be patronising)

core has basically just come to mean a more "extreme" version of any genre really. kids like to take a genre name and put core at the end. trancecore, metalcore, crunkcore, deathcore, who the hell cares. it's all pretty meaningless really.
