Époisses de Bourgogne is the best cheese but it is difficult to find (at least in my location). Other favorites are Humboldt Fog, Point Reyes Blue (tho I fuck with all blues, especially Roquefort and Gorgonzola), Murray's Estate Gouda, and hard to beat a chunk of Parmigiano fresh off the wheel.

if i had to pick one single best cheese i would probably go for comté
i've had a lot of humboldt fog it's pretty good but it's very busy i'm not huge on the layered stuff

The way Humboldt kind of softens from the outside and gets stiffer and more goat-y toward the center is my favorite part 😬
