I mean I've been bashing them for years (especially their recent output), lol
back to srs biz, where does DM (now) rank your musical yearnings? Has it progressed beyond "I'm blasting this out because it works as a gym accompaniment" territory - I'm sensing a shift here

Yes and it has been that way for quite some time now, I'd say. DM (or any subgenre of metal, for that matter) just happens to be the most suitable "background" music for the gym. Need something that subconsciously doesn't put me to sleep but is also easy enough to mentally ignore (?) for the most part.
That said, I (obviously) never critically evaluate anything I'm listening to at the gym, mostly because I'm not truly "listening" to it. (In fact I rarely - if ever - listen to something "new" at the gym - almost always repeats.) Shift happened sometime around...2018-ish? When death metal (and metal in totality) became more of an active-listening "I'm seeking out albums" genre for me rather than just something to specifically zone out to.
