There’s only one way to make a French omelette. Butter in the pan, bubbling but not brown; beat three eggs, pinches of salt and white pepper, cast into the pan; mix to break the curds until the bottom is just done; add cheese, fold twice, and plate.
After a few years I have an 80% success rate. The other 20% I get distracted by work emails, the news or sputnikmusic dot com and miss the ten second window where the omelette is the right consistency. It’s a good lesson in mindfulness.

I just made abother batch of crepe mix. I got this caramelised raspberry vinegar finishing sauce thing from Aldi. (Seemed to be an Xmas only thing) and holy shit its amazing. Also baking cookies tomorrow or thursday so keen for that

I’m 1000% on board with making this a sputfood thread forever. I need to up my game. Right now I’m just addicted to breakfast burritos. Eggs, beans, cheese, bacon, tots, and then sometimes I add guac. I throw crystal hot sauce in plus burlap and barrel’s cobanero chili flakes. So good

I got taco night on lock if I do say so myself. Throw a pork shoulder or brisket in the oven in on slow, whip out the tortilla press and cast iron for some fresh soft shells, whip up some quick salsa verde, pico de gallo, avocado crema or cabbage slaw and bust out the hot sauce. Sounds wack ik but the secret to great pork carnitas at home is to cook that shit in orange juice. Even better if you throw the zest in. Thank me later
