Yes it should. Zip does compression of anything, it's just that the compression ratios are pretty bad for stuff like mp3s because they're already compressed.
Now that I'm thinking about it though, there's no reason why the compression wouldn't be done sequentially for the files in the archive so yeah I take back my statement that a partial zip wouldn't be able to produce any files.
