Nothing is pretty much the album that put them on the map and is, besides this one, their most accesible. So give that a shot. After that get Destry Erase Improve and Chaosphere and go on from there.

For a good overview of the band's style, get Destroy Erase Improve, then obZen and then Koloss.
To delve even deeper into Meshuggah, go to Chaosphere, then to Nothing, then to Catch 33.

It really depends on what you like. If you're into thrash and in-your-face metal, then Destroy Erase Improve and Chaosphere are where to begin. If you're into long, complex, progressive material like myself then Catch 33. If you dig more accessible, groovy stuff, then Koloss and Nothing. If you want a summary of Meshuggahs entire career, I'd say ObZen and Koloss. Every person I've met finds a different Meshuggah album to be their most accessible, much like most people I know have different favorite Meshuggah albums. People like this reviewer can claim that they've been releasing the same record since DEI, but whoever says that is either not familiar with Meshuggah's discography or is just flat out lying.

How awesome would this be?
You are at a sold out Meshuggah show. The lights are out, as the crowd awaits the beginning of the show. The place is so packed that crowd begins to slowly sway, from side to side, as the anticipation of Meshuggah is starting to boil over.
And then........
The soon to be infamous sound of the heavy attack of a guitar pick can be heard, pulsating steadily on a guitar string. Out of the darkness, the lights begin to arise and reach a blinding climax, just as the band explodes into Break Those Bones Whose Sinews Gave it Motion.
Best opening to a show ever?
