i can totally sympathize, used to play cello loads but completely dropped off due to university work and stuff, i'm awful now
acoustic guitar is always a good choice for the temporally-challenged though, you can just kinda pick it up and noodle around in a spare 5 minutes, learn power chords and the blues scale and you're good to go
