The Beatles and other 60s bands sound dated and apart from Helter Skelter, not much of what I've heard sounded like any more than soft rock.

Tbh prior to 1970 I've yet to find something that truly stuck with me. Early Sabbath is about as far back as I usually go, and 90s onward is where music really evolved in my eyes. Production values increased, more singers that didn't sound painfully normal came out, technology got better, songwriting got better and more emotion-evoking as the state of the world got worse and more people wanted to open up their hearts. I respect the older stuff more than I actually enjoy it, because while I know they paved the way, it's just too dated sounding for me. Modern recordings of older pieces get me more. Can you imagine how bad a recording of Beethoven's 5th would've sounded circa 1808 as opposed to a modern symphony group recording it? Lol
