The ending of Dogs always had me wondering if it would be even more climactic with Gilmour and Wright doing it

Honestly I think it's probably better as it is. That part is made for Waters. Gilmour and Wright would bring too much melody to it.

How can you have too much melody?

When the part in question isn't meant to be melodic.

"How can you have too much melody?"

melody sometimes needs breathing space to have more impact

I would prefer it as it is in the live version where Roger does the main vocals in the last part and David counterpoints it after each line

I mean it kinda happens in the studio version but Dave's parts are very quiet and in the background

The ending obviously great as is (hell Animals alone has 3 of Floyd's best climaxes) and there's nothing wrong with Water's performance there, but hear me out:

Dogs in its entirety helps to parallel a young, enthusiastic "dog" trying to make it into this ruthless world (portrayed by Gilmour) only to make it in the end as being confused, alone, and bled dry (portrayed by Waters). However the ending to me has always been a 3rd party narration where his ultimate fate is read off (like when a main character dies in a play), mostly caused by the victim's actions he was signing about earlier. There's a good chance it would have been more emotional with Gilmour and Wright playing that role together cause they have that massive, choir like harmony

Gotta disagree. I definitely don't think it would be as powerful if Gilmour and/or Wright sang it.

That whole "choir like harmony" thing you're talking about (Rowan and SpaceMan) just wouldn't fit that part at all imo.

Just to clarify, I'm happy with Waters doing the "gotta admit" part but I think Gilmour/Wright, or perhaps even all three at the same time, should've done the "who was" part at the end

Like I said originally, its just something I often wonder... Water's has a really cynical and dark tone in his voice which also fits the part nicely.

Once that short drum rolls kicks on I have goosebumps until the end, especially when he sings "Who was giveeeeeeen a pat on the back" and "who was groooound doooown in the eeeeeeend"... such dark imagery in that ending
