i'd have to say off the top of the dome: rza, dj premier, dre (although detox is sounding meh), kanye, j dilla (r.i.p.), madlib, no id, ant....one could argue the neptunes, but they haven't made a great beat since they did hell hath no fury
honestly, only about half those guys could truly be considered mainstream though...others are semi-underground.
