"Alex if Deftones aren't a rock band what are they?"
An Alternative Metal band from White Pony on (and a nu metal band pre-WP). Don't really see them as a rock band at all and I've honestly never really heard anybody call them a rock band, unless you want to use Rock as this huge umbrella term for electric guitar music.
They obviously have tracks that aren't metal at all scattered through their albums but on the whole that's what I would describe them as.

At their most basic level, Deftones are a rock band. Also Pots I know you dig SNW so you don't think they're that shitty.

@Alex, yeah I would, then I'd break them down into sub genres.
Metallica and Green Day are both rock bands, but Metallica are metal>thrash metal whereas Green Day are Punk Rock>Pop Punk>Alternative Rock if you want to get more specific imo. Maybe it stems from the fact that not many of my friends listen to electric guitar music so I just say to them 'yeah I like rock' because it's easier. Breaking it down into subgenres would be kinda lost on them.

actually i kind of got into deftones a little bit in grade 5 or 6 but didnt fully explore them at all and didnt get a lot of their music. got fully into them when SNW came out and started appreciating their back catalogue more than i did previously.
