Start with Summerteeth or Yankee Hotel Foxtrot for Wilco. Normally I'd say just go chronologically but you probably wouldn't like their first two albums.

Being There is amazing but it's alt-country hence less accessible for you than Summerteeth or Yankee Hotel Foxtrot, by all means try it but I wouldn't suggest it as a starting point.

I'll probably just do Yankee Hotel Foxtrot first tbh
