Yeah I think it was the vocalists that took Underoath to the next level. These guys were able to do it without over-the-top guitarwork, which is usually a prereq for metalcore bands.

See them as more post-hardcore than metalcore, though they do kind of tiptoe in-between. Aaron always kind of got on my nerves, but Spencer goes pretty hard and plus the atmospherics these guys toy around with are definitely a plus

They definitely aren't a textbook example of a metalcore band. Chasing Safety was no doubt a post-hardcore record. Aaron can get a bit obnoxious at times with his super squeaky clean vox in a heavier genre. Spencer & Aaron were at their best when they were layering their voices and doing things more interesting than just taking turns doing verse, chorus, verse, etc.
