Sudo was awesome. Also took me a while to realize you needed to use the water bottle on him. He had amazing defense stats, though. Dude was solid, thick, tight.

Last Pokemon game I played and truly enjoyed was Emerald. Put so many hours into that thing and actually completely the Pokedex. I tried out Black/White (and even Black 2 / White 2) on emulators but couldn't get into them. Just wasn't a fan of all the extra stuff they tried to incorporate with the dual screens, I guess.
Gold/Silver were probably my favorites though I played Red/Blue the most. Those came out right at the tail end of my grade school years and so I had plenty of free time to sink into them. I've probably played through and beat Red/Blue at least 20 times. Wore the save battery down on my Game Boy cartridge even.

Wearing a cartridge save file out is real dedication (or a sign of second hand buying ;]) and apart from the weak story, Gold back in the day was the absolute bomb
Black and White were kinda unfortunate but B2/W2 were pretty cool in their way. Kinda felt like Greatest Hits games, with all the positives and negatives associated
Of all the games today though I think my favourite is Platinum or Diamond. Best national Pokedex, best story and loved the Hokkaido based world design

I think you're meant to catch a Mankey outside the League building, but poor 10 yr old me's Pikachu got grinded to oblivion. Think I used that to spam tail whip on Onix and then prayed I'd be able to use whatever spare pokemon I had to wear it down

I remember grinding for literally weeks with Pikachu in Yellow on bullshit pokemon like Rattata and Caterpie and shit just to get Pikachu to like, Level 20 before fighting Brock. Took forever and was still a struggle.

And why didn't you just catch a more suitable Pokemon? Lol. From memory you could get a male Nidoran with double-kick by level 14?(ish) Butterfree learns Confusion when it evolves (which is EARLY) and although it isn't super-effective, the fact Brock's pokes had such terrible special meant it inflicted a very decent amount of damage. As has already been mentioned Mankey is available early on Yellow so that's an option.
Personally I usually went for Butterfree as it required the least amount of training, I did the same on R/B when selecting Charmander as my starter.
(idk, maybe you're one of these RPG types who was role-playing Ash to a tee).
