if you fly into toulouse and rent a car you could have a fun weekend just touring all the cathar castles! also there's the massive castle called carcassonne that's not so much a castle but a city with enormous walls surrounding it. which is... south-east of toulouse. seriously, carcassonne is mind blowing. like a real life disneyland. (and the food...)
