What I would do is instead of trying to mix Godspeed in there try a more straight forward post rock, like Explosions in the Sky or something.

Tbh Godspeed is pretty much the only post-rock (excluding metal) I listen to. Before I align myself to any genre I'll probably try my hand at writing different things- regular rock songs, ambient stuff, heavier stuff etc etc before I go with one.
Speaking of which, what is it better to start off with- melody, riffs or chord progression?

It depends. I always start with the riffs personally. If you're planning on writing some acoustic, piano, or otherwise chord-based songs then start with the chords instead and make the melodies based off of that because trying to figure out the chords to an already existing melody is more trouble then it's probably worth.
