Unsung Culinary Heroes

Been getting into doing a little more chefery of late, something so satisfying about giving birth to your own meals. Everybody talks about the big dogs on the plate. Eggs are tight. Avocados primed for lovin'. But there's plenty of brilliant ingredients that don't always get the same shake. Here's to those studs quietly trucking along keeping everything together, keeping it great, keeping it real. Here's to the bass players of the dinner table.

Cheese gets a lotta love (specially with my fellow Yankee people), but this don't always apply to this mellow Greece wonder. Yeah, it's pretty shitty on its own but you don't go drinking barbecue sauce neither. Just cause you wanna horf down some shredded cheddar on the downlow doesn't mean you should wave your nose at this elegant sob. Pop that shit in a salad wrap and you'll be cruisin'

Take it out the salad bowl and pop it on something a bit drier, and it's as satisfying as rubbing an ice cube on the forehead when the thermometer outside's taking you into Do the Right Thing territory. A banh mi's a God damn masterwork of a sandwich.
