Murder by Death is a cool band, real unique, folkish, countryish sound, check out their album Who Will Survive and What Will be Left of Them?
Elliott Smith is a really good acoustic musician, i dont know if i would consider him folk, but a lot of people do, cant go wrong with any of his albums
Seven Mary Three is a pretty cool band, the singer has a fairly southern voice, i wouldnt say country, but its close, American Standard is my favorite from them
The Reverend Horton Heat is awesome, he plays rockabilly, which isnt country or folk, but its cool none the less to people who are into that style of music
Ween album 12 Golden Country Greats is an awesome album, at least i believe it to be, its definitely an alternative take on the country genre, worth a listen at the least | Vespiion

Nick Drake - Pink Moon (essential folk)| Family Tree for some covers
Arborea - s/t | Red Planet (vemvox, mashup - more atmospheric)
Rodrigo Y Gabriela - s/t | 11:11 (for intricate guitar work)
Elliott Smith - s/t | Either/Or/XO (also somewhat essential)
Jenny Hval - Viscera (don't pay attention to the lyrics if you don't like ridiculous absurdity)
Laura Marling - discography, should only be 3 albums and covers a variety of influences
Vali - Forlatt (more neo-folk-ish with some femvox sprinkled but mostly instrumental)
Empyrium - Where At Night Grouse Wood Plays / Weiland(rather 'classically influenced' structures, more on the dark/atmospheric side)
