So this is a habanero hot sauce recipe I've worked out. Seeing as it uses so many habaneros, it's fairly hot, so be careful if you aren't used to this sort of thing. It has a bit of a mix of chiles, with red jalapenos and serranos as well as the primary chile - the habanero. The soy sauce mixture/Ass-Kickin' grill sauce gives it a bit of a smoky-sweet flavor, the chiles and hot sauce/extract give it heat and flavor, and the honey gives it a sweet flavor that, when combined with the heat of the habaneros and the mixture of all the other fresh ingredients, makes it a very unique and tasty sauce.

Also, a lot of the proportions of ingredients are best guesses, as I basically threw ingredients in the sauce until it tasted good. In other words, almost nothing here is exact - use however much you think the sauce needs. Make it your own.

-Chile extract to taste (depending on how concentrated your extract is, be careful with this stuff: a little can go a long way. Use only if you have a burning desire for more heat, not actually necessary to the sauce, so don?t go into a lot of trouble to get some if you don?t have it - you can pretty much only get it online and at hot sauce specialty shops)

* - I don?t remember exactly how much of this I put in the sauce - it?s just my best guess, I wasn?t really measuring. This amount is just a guideline, use however much you feel it needs. "to taste" does not mean it's necessary.

1: Stem all chiles. Puree until all big-ish chunks are gone, either in blender or food processor - blender takes longer, but it works. Add some water or vinegar if you?re having trouble, but not too much.
(-Careful here, pureeing the chiles, esp. the habaneros, can actually hurt your eyes and sinuses because of stuff being sprayed in the air. Open a window, breathe through your mouth, and you might want to use eye protection.)

2: Put tomato + cilantro + shalots + garlic + limes in with pureed chiles, puree. Add some water/ vinegar if you haven?t already, but don?t go overboard - you?ll be adding most in the simmering process.

3: Put mixture in a small or medium saucepan, turn on medium low heat. Heat up to a simmer, add cayenne pepper, crushed red pepper, honey, ass-kickin? sauce/soy sauce mixture, salt, hot sauce, chile extract, and sugar.

4: While simmering, add what you think is a good amount of vinegar/water for your desired thickness. Start off with vinegar, add water only later, if you begin to worry about it tasting too vinegar-y. don?t worry about adding a bit too much now, you can always boil it off later

5: Let simmer for around 10-15 minutes. Try to keep it at a constant heat and simmer - don?t let it boil too much. Stir every now and then.

6: Take off stove, let sauce cool to around room temperature.

7: Put sauce in blender (this time, not food processor, I think. Dunno, the processor might work, just probably safer to use a blender). Blend until as many little chunks as possible are de-chunkified - probably will take 5-10 minutes. Add water or vinegar if it?s too thick to blend properly.

8: (Optional, but usually a good idea). If you feel it needs it, simmer/boil the blended sauce again. This is a good time to boil off excess liquid until you have your desired thickness, and also to add more of anything else you feel the sauce needs more of. Take off stove, cool, and blend again if you feel like it.

9: Put in container(s) and refrigerate. Use any containers you can find, e.g. bottles, jars, etc. I use those 8 oz. Pellegrino glass bottles.
