His cover of the NIN song Hurt is very easy and surprisingly emotional.

The Colour and the Shape

Tune the guitar down to drop D and serenade the ladies with Everlong.
4The Lonely Forest
Arrows

We Sing In Time. Not sure why its fun to play. There is a cool Am to Em chord transition.
5Band of Horses
Everything all the Time

Funeral sounds beautiful on any guitar.
6 Guns N Roses
Appetite for destruction

Sweet Child of Mine sounds complicated but is really not bad and everyone sings along.
7Wilco
Yankee Hotel Foxtrot

Honestly almost any song from a Wilco album is fun and easy to play.
