Let's Have A Sput BBQ!!

And I ain't talkin' 'bout cookin' up dem burgahs an' hot dawgs. I be talkin' 'bout cookin' up some Texas Brisket an' havin' some good ol' potater salad wit some brews. Dis shit's goin' down at mah crib in December, an' all are invited, except Maniac! He'd eat everything.

Texas Brisket- Rubbed down with a combination of salt, pepper, brown sugar, espresso, and a few other key ingredients(some of them should be obvious, some shouldn't), then smoked for 6+ hours over a mix of mesquite and hickory chips.

Flank Steak- Seasoned very heavily with coarse-ground pepper and rock salt, then grilled to a perfect medium rare and topped off with a homemade chimichurri.

Elgin-Style Hot Sausage- A tiny town just outside of Austin is known for making their spicy German-style sausage. The only way to cook it is over charcoal, and then top it off with a very mild bbq sauce.

Espresso-Rubbed Spare Ribs- People don't understand that espresso goes very well with beef/pork, and adds a whole new depth of flavor and earthiness to the meats. Rub down ribs with a combination of salt, pepper, espresso, and cayenne. Smoke until tender, and then finish off on the grill. I prefer them dry, but sauce is just fine.

Lemonade Chicken- Marinade chicken in a mixture of lemon juice, lemon rind, ketchup, and sugar, then grill. Be careful because the chicken will carmelize very quickly. I've had to finish the chicken in the oven several times due to the high heat burning the outside.

Pit-Smoked Baked Potato- Another Elgin, TX favorite. Heavy oil and salt whole potato, then wrap in tin foil. You want indirect contact from the heat, otherwise the potato will burn. Top with BBQ sauce, cheese, and your choice of meat.

Homemade Potato Salad- Boil red potatoes until fork tender. Toss with homemade mayo, salt, pepper, cayenne, and a bit of apple cider vinegar. Add in raw onions/shallots at the very end.

Pit-Smoked Corn on the Cob- Season generously with cayenne, salt, pepper, and a bit of chipotle powder. Put on grill right over heat source in your smoker.

Buttermilk Pie- A very thin graham cracker crust surrounds a very fluffy, very lemony-sweet buttermilk pie.

Smoked Candied Apples- Found this out by accident. Place apples inside of smoker as far away from the smoke as possible. As soon as apple is nice and soft(not mushy), take out of smoker and roll in a spicy-salted caramel and top with chipotle-seasoned peanuts.
