Old coltrane is easy to get into and so is the miles davis highlights.
I'd suggest:
Kind of Blue- Miles
Giant Steps- Coltrane
Maiden Voyage- Hancock
and Charles Mingus is incredibly interesting, but often complicated, stuff

In general, I've been enjoying Pat Methany (guitar) lately, Mulgrew Miller (piano), Avishai Cohen (upright bass), and McCoy Tyner (piano).
