Not measuring when baking is a really bad idea. It's fine for cooking but you really do need to measure in baking because the balance is really delicate sometimes.

like all the stuff you get from experience, like knowing what's good together, how much of certain things you need in recipes to get the taste and not over power, et al. plus showoffy tricks.

Yes, the way certain things are prepared and the order ingredianets are placed can really have an effect on how something tastes. For this reason, im picky about in what order everything goes on a sandwhich.

well it's all experimentation. but it's like an instrument...the more technical knowledge and theory you know, the better chance your experimentation won't end up crappy.
