There are different stages in the human sleep, You've got some kind of "deep" sleep and the Dream sleep. (And another one, but that's irrelevant) When you wake up during the Dream Sleep, you remember a lot about your dream. When you wake up during the Deeper sleep, you remember next to nothing.
