My sister told me to make some for her because she liked the bit I gave her so much. I added teryki and sezchuan sauce and red hot pepper flakes, just because the two sauces I have work increadible well together and it's so good. Chicken is too much work to prepare, especially sinceI like mine in a fine dice. |

I buy thin chicken breasts. They're only as thick as about the width of your pinky. And then I dice that. When I eat chicken, I cut it to the size the pinky nail, basically. Cubed. Fluffing and mixing everything the right way isn't so straightforward the first time around. It only takes a few hours though, really. |

If the pieces of the chicken are small, however, even if they're overcooked it's no big deal, because they're covered in sauce anyway, and they're very easy to chew. |

Easy to cook, but not easy to cook well.
It's hard to get a nice, juicy, flavorful piece of chicken. Especially if all you want to use is a sautey pan. I guess you could sear the outside in the pan and then transfer to the oven to complete the cooking. That would come out well. It'd still just taste like chicken though, which is kinda bland. You could marinade it, but I'm too lazy. |
